PRODUCT DESCRIPTION
Soft wheat flour obtained by grinding and consequent sifting of soft grains, freed from foreign substances and impurities.
Complies with current Italian legislation and in particular with the law 04/07/1967 n. 580 and subsequent amendments.
USE
Preparation of doughs with an indirect method (biga added to the dough for at least 30% and stored at 18-20 ° C for a period longer than 24 hours). Very strong flour obtained from a blend of grains specifically designed to characterize the finished product.For bread with an unmistakable fragrance, a delicate flavor, a uniform amber color, and light and honeyed crumb. Particularly suitable for the preparation of hydrated doughs around 80%.
