Gluten-free bread and pizza mix
PRODUCT DESCRIPTION
Corn starch, rice starch, millet flour, thickeners: guar gum (E412), hydroxypropyl methylcellulose (E464); psyllium fiber, rice sourdough, pea protein isolate, yeast extract, humectant: sorbitol (E420); food enzyme.
USE
Preparation for bread:
500 g mix, 470 g water, 15 g honey, 15 g oil, 7 g dehydrated brewer's yeast or 20 g fresh, 12.5 g fine salt. Work the dough in the planetary mixer with the leaf for 5-8 minutes. Let rise. Bake for 10 minutes in a hot oven at 200°C with 100% humidity then dry, lowering it to 190°C for another 30 minutes (or to be adjusted according to the size of the sandwiches).
Doses for pizza (preparation equal to bread):
500 g mix, 480 g water, 15 g honey, 15 g oil, 7 g dehydrated brewer's yeast or 20 g fresh, 12.5 g fine salt.
